Antioxidant Potentials of Tomato Paste Extracts Found on Major Markets in Accra Metropolis

Abstract: The harmful effects of the free radicals on humans could be inhibited by antioxidants in fruits and vegetables. Tomato contains several antioxidants such as phenolic compounds and flavonoids. Consumption of tomatoes has been related epidemiologically to a lower incidence of cardiovascular diseases, prostate, gastrointestinal and epithelial cell cancers. In this study ten different brands of canned tomato pastes on the Ghanaian market were evaluated for their antioxidant potentials based on their polyphenolic and flavonoid contents as well as DPPH free radical scavenging activities. The amount of total phenolic compounds extracted were determined using the Folin-Ciocalteu reagent. Total flavonoid content was determined using aluminum chloride colorimetric assay method. The antioxidant activities were evaluated using the DPPH scavenging activity. Total phenolic and flavonoid contents ranged from 6.26 mg GAE/gdw to 22.82 mg GAE/gdw and between 1.83 μg QE/gdw to 45.26μg QE/gdw respectively. DPPH scavenging activity ranged from 8.03% to 29.69%. High and significant correlations existed between antioxidant activities, total phenolic and flavonoid contents of tomato paste samples analysed indicating these pastes are potentially rich sources of dietary polyphenolic compounds and antioxidants, and might contribute important health benefits to consumers.

Abstract: The basic composition (The total protein, total carbohydrate, total lipid, crude fiber and ash content of each mushroom were studied on dry weight contents were determined in the cultivated mushrooms Agaricus bisporus/white, Agaricus bisporus/brown, Lentinula edodes, and Pleurotus ostreatus and they ranged from 28.38-49.2, 1.54-4.96, 13.2-29.02 and 7.01-17.92, respectively and this shows it has high content of protein and fat fiber and low fat and this good for as alternatives food stuff andtheseresults asserve as the basis of further scientific study into various ways of enhancing the livelihood of particular areas of northern Mekelle through increased mushroom domestication as well as assessing the possible bioactivity of mushrooms against foodcertain human diseases.

Abstract: Triphenyl phosphate (TPP) is a triester of phosphoric acid and phenol. It is commonly used as a fire-retarding agent and plasticizer for nitrocellulose and cellulose acetate. The present study was an attempt to evaluate the impact of biofield treatment on physicochemical and spectroscopic properties of TPP. The study was carried out in two groups i.e. control and treatment. The treatment group was subjected to Mr. Trivedi’s biofield treatment. The control and treated samples of TPP were characterized using X-ray diffraction (XRD), differential scanning calorimetry (DSC), thermogravimetric analysis (TGA), Fourier transform infrared (FT-IR), and ultraviolet-visible (UV-Vis) spectroscopy. XRD study revealed the decrease in crystallite size (6.13%) of treated TPP that might be due to presence of strains and increase in atomic displacement from their ideal lattice positions as compared to control sample. DSC thermogram of treated TPP showed the increase in melting temperature (1.5%) and latent heat of fusion (66.34%) with respect to control. TGA analysis showed the loss in weight by 66.79% in control and 47.96% in treated sample. This reduction in percent weight loss suggests the increase of thermal stability in treated sample as compared to control. FT-IR and UV spectroscopic results did not show the alteration in the wavenumber and wavelength of FT-IR and UV spectra, respectively in treated TPP with respect to control. Altogether, the XRD and DSC/TGA results suggest that biofield treatment has the impact on physical and thermal properties of treated TPP.

Abstract: Water quality assessment of some seleted well waters of Sabo Yeregi in Katcha Local Government Area of Niger state was carried out using standard analytical methods. Water is a valued natural resource for survival of all living things; the importance of assessing the quality of this valued resource cannot be overemphasized. In this study, the physical, chemical and microbial values were analyzed from six well water samples collected from Sabo Yeregi, Katcha Local Government Area of Niger State using standard methods. The pH ranges 6.30 ± 0.04 to 7.15 ± 0.07. Nitrite ranged from 0.03 ± 0.02 to 0.11± 0.01mg/L. Well 1(85.45 ± 0.64) has the highest total dissolved solids (TDS). Iron recorded 0.24 ± 0.02mg/L as the highest and 0.07 ± 0.00 mg/L as the lowest in well 5 and 6 respectively. The hardness for well 1, 2, 3, 4, 5 and 6 were 113.50 ± 0.71, 38.00 ±1.42, 63.00 ± 0.00, 27.50 ± 0.71, 31.50 ± 0.71 and38.00 ± 1.42mg/L respectively. The sulphate concentration is 64.68 ± 0.06, 89.22 ± 0.09, 92.74 ± 0.09 29.01 ± 0.09, 102.27 ± 0.41, and 77.25 ± 0.11mg/L for well 1, 2, 3, 4, 5 and 6 respectively. The highest temperature recorded was 29.06± 0.090C and the lowest was 27.92± 0.02 well 5 and 3 respectively. The turbidity was 4.42 ± 0.06, 0.50 ± 0.04, 0.36 ± 0.08, 2.06 ± 0.06, 2.37 ± 0.21 and 2.47 ± 0.05NTU for well 1, 2, 3, 4, 5, and 6. All the parameters were within the NSDWQ and WHO standard except pH in well 1, 2, 6, hardness, nitrate in (well 4) and manganese (in well 3). All the samples contain coliform with the exception of well 5 but there is no present of E.coli in any of the sample.
